Mmmmm.....Salad

I've been making an actual effort to eat more raw foods each day. I'll never be a raw food purist, but I do think raw foods are important to good health.

I've been doing fruit and/or green smoothies several mornings a week, and I've been eating some nice salads too! It occurred to me tonight that I should share! This was tonight's supper salad:

It is....'waldorf-y' It has romaine lettuce, then half a red delicious apple cut into chunks, a cup up celery stalk, some (raw) walnuts, then some alfalfa sprouts from our kitchen sprouter, a little grated parmesan and some honey-lime dressing.

How to make honey-lime dressing: Put some honey, lime and light mayo in a bottle. Shake the bottle until it's all blended. Taste it, and add more of whatever it needs more of. Yummy.

OK, so the dressing isn't totally raw, since the mayo and lime juice are from the store (the lime juice was in a bottle). They honey is from our bees, so it's raw. And the last of the pringles that I just ate? Those weren't raw either.

Pobody's nerfect.

The salad sounds delicious!!! I am going to have to try it. Never would have thought of using apples, celery and walnuts with lettuce. You are truly an inspiriation!

My *clean the fridge* salad from last night...
Romaine lettuce and baby spinach, dried cranberries, a broiled skinless boneless chicken breast cut into little pieces, tomatoes (chunked),a bit of cucumber, a few grapes, all dressed up with a dressing I made from rice vinegar, olive oil, honey, orange juice, a squeeze of lime juice (bottled) and I tossed in some minced garlic, salt, pepper, paprika.
Was soooo good!

I like fresh spinach leaves, orange segments, sunflower seeds, and tomatoes. Drizzle it with oil/vinegar dressing and chow mein noodles LOL they arent raw but they sure are good

Boy those sprouts look yummy! I should try sprouting one day

Y'all are makin' me hungry! D, I have a little plastic 3 tier sprouter I've had a long time. I'll have to take a picture of it and post. It's pretty simple, and easy to keep clean (bonus!)

I've had the best success with alfalfa sprouts, and I like them. Chia is good and does well too. I'm not having much luck with mung beans. I have a few on my list to try - fenugreek, radish, broccoli for starters! :)

I read a lot of the holistic health type stuff and have read numerous times that alfalfa sprouts are NOT good for you...can't remember why off hand and my quick google didn't turn up the true reason. Have you ever heard that?
My mung beans are getting better with practice LOL they like to be in the dark and rinsed 3-4 times per day.
I usually don't give my kiddos cold cereal but this morning they had cheerios with grated apple and a dash of cinnamon...they loved it! (we were out of bananas lol)

Melissa, I've heard two different things about why alfalfa sprouts are bad. One has to do with them having the potential to cause cancer because of something in their makeup...but it turned out after further research that you'd have to eat bushels of them daily for a long time to have ill effect.

The other concern is with microorganisms - and I suppose this would be true with any sprout. If they are left in ick water, things grow. If they are kept too long, same deal. So, I make little trays of them that I can eat rather quickly, and after the first 'grazing' (lol) I rinse them super well and keep them in the fridge (sans water).

I am a salad FREAK but I definitely find them less appealing in the winter. That said, my absolute favorite anytime salad is: kale leaves torn into bite sized pieces (no stalk, thank you), fresh shopped tomatoes, a diced avocado, olive oil, maybe a squirt of Bragg's, pepper, and sea salt all smushed together (or if you want to be fancy- "massaged") with your hands for five minutes or so. I could eat this all day long.
