This Week's Menu Plan

Yes, it's April Fool's day, but when it comes to planning meals and keeping with our budget, I'm not playing around!  Har.  This week's plan is all food that we have on hand, so when the new sale ads come out on Wednesday, I can focus on purchasing produce, etc. for the upcoming week.  Here is this week's plan:

Breakfasts, some will repeat:
yogurt, homemade granola and fruit
breakfast tacos, oranges
cereal, milk and fruit
pb toast, fruit

Lunches
leftovers from supper when available
big salad with cheese, croutons and nuts, dressing
bean burritos/black bean burgers, salad, oranges
pbj, celery sticks, fruit

Snacks
popcorn, juice
peanut butter and celery
yogurt and granola
Easter candy

Suppers, in no particular order:
spaghetti w/meatballs, garden salad, pears (This was our Easter Dinner)
beef stew curry, rice, oranges
fried chicken, mashed potatoes, sweet corn, slaw
tuna sandwiches, slaw, apple crisp
teri beef, rice, macaroni salad, kimchee, fruit salad
franks and beans, rice, oranges
breaded baked chicken, hash browns, green beans, apple crisp

grocery list/confession:  I make the worst fried chicken in the universe.  Truly, it's awful.  So on Tuesday night, Husband will stop at KFC and pick up some of their 2pc/99 cent deal.  Other than that, everything else is here at home, ready to make.

What's cookin' at your house this week?

If I could buy KFC for that great price I would not bother making the fried chicken mess! Besides--KFC is SO good! I have been using this method for fried chicken and it makes the best chicken I have ever eaten at home. I use a deep cast iron chicken fryer and for me the first side is 20 minutes and the second is 10 minutes. Anymore than that and it is way overcooked. I just use flour with S&P and garlic powder added to bread the chicken.

This really is a great deal. You get a leg and a thigh for .99, and you can get regular, grilled, xtra crispy, whatever. I just make the sides and he walks in the door with $4 worth of chicken (enough for supper, a lunch for him at work and even some leftovers) and we are good to go. I have tried and tried to do fried chicken, and it is somewhere between 'meh' and 'seriously, what did you do to that poor chicken?'. I guess I've officially given up. For the record, my mama makes FANTASTIC fried chicken. The best. I guess it skipped a generation. :)

Thanks, Momma-Lana! I'll definitely check it out! When you say 'deep cast iron chicken fryer', are you talking about a dutch oven, or a deep cast iron skillet? I have both, so I'm just trying to picture it. Also...do you have a blog - if so I'd love to check it out! :)

No blog. My children have been telling me I need to start one but I haven't. I have a really deep cast iron skillet that is called a chicken fryer in the south. I also have a cast iron Dutch oven but the chicken fryer is larger so I use it. What I love about frying chicken this was is that there is absolutely no splattery mess and that drives me nuts on the stove top. It seems like I am cleaning up the greasy mess for days.
