Menu Plan Monday - Sorta.

Mine is not that organized this week, for a number of reasons. I'm going with a very loose plan for the week, and we'll see how that goes.

First - leftovers. We have some, and mostly, they are soups. We've got some vegetable beef alphabet soup, some ham potato corn soup, and guess what my neighbor brought us yesterday? Beef and bean soup.

I think we'll do a 'pick your soup' day, with a salad and some cheese biscuits or something.

I asked for requests. Hubby would like to have steak this coming weekend. We have sirloin in the freezer, so we'll do that for sure.

He also mentioned a family favorite that we haven't had in a while - green pepper hamburgers in mushroom soup gravy over rice. Green beans on the side. We can do that one too.

Little Bit wants tomato soup with abc's in it. Also do-able. Soup seems to be a theme in our lives right now, teehee.

I would like to have 3 bean salad...maybe with ham sandwiches?

I'd also like to make chili, but with all this soup, I may make it and just freeze it (I had already started thawing ingredients when our neighbor brought the beef and bean soup, so I was already somewhat committed.)

I can see ham fried rice as a use-up-the-leftovers meal based on all of the above, or else some mac and cheese with ham.

To add to the general confusion, this week I'm going to make scones and biscuits. I'm also going to try my hand at home-made tortilla chips (starting with some excess tortillas I have on hand). I'll be starting a new batch of kimchee too, and I need to make hamburger buns. If I get ambitious, I'll make more freezer mashed potatoes too.

And that's the plan.

Um.

Yeah.

I'll let you know how it turns out. :)

That sounds like a good plan to me! And, it's hard to pass up soup when it's cold outside.

I am so ready for warmer weather ~ but then I cringe at the thought of the big twisty clouds returning...oy! The weather in Arizona was always so boring compared to Nebraska.

Thanks, y'all! Today I made kimchee, cranberry-lemon-pecan scones, tortilla chips and I started some bread. I made brown rice and the hamburger meal for hubby, and we're working through the soups too. So far, so good - thanks for the encouragement!
