Kinda like Two birds with One Stone, except with Cake Mix.

First, a warning. The 'shift' key on my keyboard is dying. This is gonna take a while, because I don't want to type in all caps. If you see a lot of non-capitalization typos, please bear with me. Thanks!

It has been, and still is, a busy week. Today we had book club, and tomorrow is quilt group, and I needed something to serve/take for each event.

I haven't had 'dump cake' (which is really more like a fruit cobbler) since my brother was in Boy Scouts. They used to make it in a dutch oven over the camp fire, and it was so good. My blogging bud Gill was talking about dump cake on her blog and it sounded like a good idea. Then, my twin-by-choice J reminded me about the zucchini pineapple, and I knew just what to do.

Instead of making it in a standard 13x9 pan, I made it in a small pan (book club) and a medium pan (quilt group).

Here are the ingredients: a cake mix, cherry pie filling, crushed pineapple, a stick of butter and pecans.
Photobucket

Shhh...our little secret!
Photobucket

Pre-heat the oven at 350 degrees. Cut the butter into bits.
Photobucket

Take the lids of the jars of fruit and...
Photobucket

..pour the cherries into the pans. Decide, 'That's not enough cherries!'.
Photobucket

Run downstairs, get another jar of cherry pie filling and pour it in too.
Photobucket

Next add the 'pineapple', juice and all.
Photobucket

Cover the fruit with an even layer of cake mix powder.
Photobucket

Sprinkle with bits of butter.
Photobucket

Break up the pecans a little and sprinkle them over the top.
Photobucket

Put the pans in the 350 degree oven for about an hour. Note that there is no mixing bowl, no measuring spoons - stop and do a happy dance - and put the canning jars in the dishwasher. Get ready for book club by tidying the house, making coffee, etc.

Ta daa!

Gracious me, that was easier than going to the store to buy something, and since the cherries and pineapple (it really does taste like pineapple, pinky swear!) are home-canned, the butter was free with coupons and the cake mix was .49 on sale, this hardly cost anything at all.

Best of all, I have an item to take to quilt group tomorrow, and my family isn't going to spend the weekend trying to avoid snarfing down all the dump cake. If you try it, we hope you like it.

Hi, Darlin' Daughter,

I'm trying HALF of the bun recipe. It is now in it's first rising. I found 4 frozen burgers in the freezer that Aunt L. brought with her in Dec. She cooks them frozen on her G. Foreman grill and they are sort of big, so I will make 4 larger buns and whatever else about regular
size.

Have fun at the quilting bee!! Bet the dump cake is delish. I think you could use about anything in it. Dad is leaving next Wed. for Ind. if no blizzards intervene, which is possible this winter.

I plan to live on burgers, chicken salad with homemade bread (yes, folks, she's got me doing it, too) and frozen pizza cooked on my Presto pizzaz pizza cooker.

Love to all,
Granny Ladybug

Hi Mom!

Welcome, ZeroHousePayment, and thanks for visiting!

Frugal Fraulein, if you click on the blog entry where the words 'zucchini pineapple' are a different color, that will link you to the original post I did about it. In that post, there's a link to the recipe. I think you might like it!

The lovely ladies at quilt group liked the dessert, and were surprised it has zucchini in it - you really cannot tell! :)
Yay! I'm so glad you decided to go with something so easy to give yourself a break! I just know it turned out wonderfully ~ and girls, I can vouch that the Zucchini Pineapple does taste just like Dole Pineapple that comes in a can...it's amazing stuff.

Let us know how the Apricot Dump Cake turned out, GrammyGoo. I'm sure it was enjoyed by all who were blessed by it, too!
we are starting a DUMP CAKE craze!!!

Gill
