Potatoes, potatoes, potatoes.

We finished digging potatoes this past weekend. We planted 5 pounds each of Kennebec, Russet, Red-skin and Yukon Gold, plus we tossed in some blue potatoes that were left over from the previous year, just to see how they would do.

The blue potatoes, Kennebec and Yukon Gold finished up a few weeks earlier, so they are already in the cellar. The Red Skin and Russet varieties needed more time, so those are the ones we dug this weekend. See how scraggly and scruffy the plants got toward the end?

We even had a few 'volunteer' plants over in the onion patch, where we must have missed a few the year before. The yields from those plants were really good too.

All told, we harvested 220 pounds of potatoes. YIKES! That's a lotta potatoes! If we can get them properly cured and stored, they should keep a while, but even so, I'm going to have to come up with some creative ways to prepare them. I may even sell or barter some.

Hi, Ten Things Farm,

As you probably know, there's no way to cook potatoes that's bad. As my Grandfather used to say, "If you can go into winter with 50 pounds of dried beans and a few bushels of Irish pertaters, you'll be all right till spring" He had a wife, 6 children, himself and his elderly father to feed. So, any way you fix them is fine, but my favorite is probably mashed (with gravy, of course), baked with lots of butter and sour cream, fried with onions and smoked sausage and of course, potato salad. Happy potatoing (is that a word?)

I had a friend who liked them raw, but I never did. Hope they keep all right. We're having lovely weather. Aunt L. comes about a week or week and a half from now.

Those are some fine looking potatoes! If I could come get some I would but I don't think I can convince my hubby to drive that far for taters.

Why not just dehydrate some as slices or even as hashbrowns? They keep forever that way. Or even can some.

You can shred them into hashbrowns and freeze them. Or cube them and add some peppers and onions...yum. How about potato soup? In the south we LOVE potato salad. Or homemade french fries.

I feel like the guy from Forrest Gump who loved shrimp!
