Winter Treats!

I love it when we can eat from our garden in the winter. We've been getting some rain lately - just in time for things like pumpkins, acorn and butternut squash, and potatoes. Lookie!!!

We have jack-o-lanterns and sugar pumpkins planted. So far, this is the biggest one we've found...almost the size of a basketball!

This is Vegetable Spaghetti - a new one for us. I hope we like it!

Right now, we're eating chard and other greens. I love the colors of 'bright lights' chard!

Some carrots. We'll keep them in the fridge a couple weeks before we start eating them. We're already eating some we picked a while back - they're so crisp and sweet!

I hope that wherever you are, and whatever you've planted, you're getting good weather and wonderful harvests. Anyone with any good winter squash recipes to share?

Your garden is amazing. I can't wait to see the pumpkins and squash when they are ripe.

Not much of a garden here unfortunately. The rain here just about killed all my plants and it's just a shame. I only had tomato plants and pepper plants this year but they were beaten down by the rain.

Oh Gosh, I can't grow peppers to save my life! It's embarrasing, living in the southwest and not having any luck with them!

I'm sorry about your tomatoes and peppers, though. I know how frustrating that can be. For us, this has been a difficult green bean year. I had planned and planted with the intention of putting up about 30 pints and 20 quarts. So far I've gotten 16 pints. Oh well!

We were out poking around in the garden this evening, and all these things I took photos of...all of them look much bigger! That pumpkin is going to be awesome. I can hardly wait!!

My pumpkins ans acorn squash have lots of lovely flowers, but not a single fruit.

I have a couple of VERY YUMMY squash muffin recipes
--I'll have to dig them out. And my mother used to bake meatloaf in a pumpkin shell.

I'd love to try some squash muffin recipes, if/when you find the time to locate them. Did y'all call that meatloaf 'Cinderella Meat Loaf'? I think that's what I'd name it, lol.
