March Menu, Week One

March is here!  Daylight Savings kicks on in a couple weeks!  This year is moving right along.

Japanese curry with beef, brown rice (underneath), and extra spice!

Last week, we planned to have hamburger salad.  We changed our minds because last week was too...um...beefy.  We ended up putting cubed beef into the curry instead of using chicken, and the cheeseburger macaroni had some ground beef in it, and we were feeling a bit overloaded by so much beef.  Instead, I made a pot of soup, and that worked out well.  There is a serving I can take for my lunch on Tuesday, and enough in the freezer for another meal in a couple weeks.  I made some lentil stew at the same time, so that will put another meal on the table this week, along with a frozen portion for a couple weeks from now.

Here's this week's plan.  We have three meatless dinners planned:

T.  hamburger salad, fresh pear

W. lentil stew, cornbread, apples

R. grilled chicken Cesar salad, rolls, oranges

F. bean and cheese tostadas, lettuce and tomato, salsa and sour cream, apples

S. vegan chicken nuggets, oven fries, raw vegetables with dip, oranges

S. vegan chili with rice (no rice for me, half a peanut butter sandwich instead), apples

M. chicken vegetable stir-fry with rice (or possibly mochi), oranges
