Dinner Plans

It's the last week of the month, and as I'm planning this, I'm trying to keep to my $80 a month, eat down the pantry and freezer challenge. We have the supplies on hand for everything listed below, but I will need to pick up a gallon of milk.  There will probably be some sale items we want to pick up as well, and we have some money we can use to do that.  I haven't looked at the ads for this week yet, but I will try to before they end!

OK, when I was planning, and typing the above paragraph, I had forgotten that Husband was transferring a prescription to King Sooper.  That netted us a $25 grocery credit on our loyalty card, which made this week a breeze!  Still, the menu below is primarily from the pantry and items on hand.

I do think we will be dipping into the reserved grocery money soon, though.  We are getting low on beef.  We have some cubed beef for stew and some cube steak, and a bone-in pot roast.  That's it, except for home-canned corned beef.  It's unusual for us not to have some ground beef on hand, but we do have other meats, and we'll be fine while we work out our beef options.

This week for breakfast will be pretty simple - most of them are.  I'm going to make a whole-wheat applesauce coffee cake or something similar that can be eaten with some fruit or a hard-boiled egg.  We have plenty of eggs from our hens too, so eggs and toast are always do-able.  There is cold cereal, oatmeal, and yogurt that can be stirred up with granola and frozen blueberries.

Lunches are generally leftovers from previous dinners, or something quick and simple.  We have quite a bit of celery on hand, so ants on a log would be a good fill-in lunch.  We could also do a snack plate with fruit, vegetables, cheese, etc., a green smoothie (I'm starting to see dandelion greens in the yard) or a PBJ and some carrots.

Here are the menu plans for dinner this week, in no particular order:

eggs to order, biscuits and gravy, green beans, peaches from the pantry

turkey lo mein w/vegetables (we didn't have this last week when it was planned), kimchee, pears from the pantry

chicken fajita quesedillas, shredded lettuce, salsa, sour cream, fruit salad

tuna croquettes, rice, kimchee, carrot/raisin salad

chili with rice or baked potatoes (personal choice), apple wedges

corned beef, steamed cabbage with carrots, mashed potatoes, applesauce

lasagna, garden salad, breadsticks if I can get them made, asparagus from the garden, frozen sweet cherries
