Mid-March-Menu

Hello, Dearies! Hope you had a wonderful weekend. We had one of the prettiest days we've had this year, then a cold and dreary one to remind us that Spring is not here yet, but soon.

All three of us are still coughing a little, feeling icky when we first wake in the morning, etc...so I'm planning a somewhat easy week as far as menus are concerned. Thanks to Laura at orgjunkie.com for hosting Menu Plan Mondays.

Breakfasts
We can have cereal or oatmeal, waffles from the freezer or peanut butter toast, all with fresh or frozen fruit and milk. I think we're planning some green smoothie breakfasts as well.

Lunches
Mostly, lunches are leftovers, but I also made some pimento cheese this weekend, so we could have that on crackers with some fruit and vegetable sticks. Of course, there is always peanut butter and jelly too.

Snacks
string cheese, whole grain crackers, fresh fruit, dried fruit, popcorn, pretzels, peanut butter playdough, yogurt.

Suppers
S - We used some coupons and went out for a late lunch. It was yum and affordable! Supper was assorted leftovers.
M - chicken-onion-cheese quesedillas, Mexican rice, bean-corn-tomato salad, oranges
T - pulled turkey bbq on homemade buns, slaw, apple wedges
W - sliced ham, spicy lentils, Indian rice with peas, steamed cabbage, fresh fruit
R - spaghetti and meatballs, garden salad, green beans, pears
F - roast chicken, stuffing, shoepeg corn, baked sweet potatoes, peach cobbler
S - beef and noodle hot dish, leftover veggies, peach cobbler
