Menu Plan Monday
We have a lot of great food in our pantry right now. Some of it is canned or frozen from our garden, some things are great deals I got couponing, and some things came from the co-op. In an effort to spend more time at home (and less time out shopping), we are planning menus with a pantry focus, supplemented by fresh fruits and vegetables we picked up at the ethnic markets a few days ago.
We got all this for about $14.50. It should last us a couple weeks.
Breakfasts:
Steel Cut Oats with Fruits, Nuts and Milk
Pancakes with Applesauce and Milk
Whole Grain Muffins with Frozen Fruit Smoothies
Pumpkin Custard and Cinnamon Toast with Juice
Boxed Cereal, Fruit and Milk (some will repeat)
I 'shopped' in the pantry and freezer this week!
Lunches:
Leftovers from previous days most of the time - one day I want to have Sardines and Crackers with Sliced Cucumbers and Fresh Fruit (craving!).
We'll probably have PBJ and Veggie Sticks one day too!
All Bran Muffins with added orange zest and dry cranberries.
Snacks:
Fresh or Dried Fruits with Dry Cereal (trail mix!)
Crackers and Cheese
Home-Popped Popcorn and Juice
I baked these Sunday, when I made muffins, chex mix, etc. Yum!
Suppers:
M - Tomato Soup, Grilled Cheese Sandwiches on Homemade Wheat Bread, Apple Cobbler
T - Roasted Chicken, Stuffing, Butternut Squash Bake, Apple Cobbler
W - Denver Omelettes, Hash Browns, Toast, Fruit Salad
R - HM Pizza, Raw Veggie Sticks w/Dip, Frozen Fruit Smoothies
F - Salmon Croquettes w/Tartar Sauce, Quinoa, Cole Slaw, Orange Wedges
Sa - Ham and Bean Soup, Cucumber Slices, Cornbread, Home-Canned Peaches
Su - Cesar Salad, Grilled Steak, Baked Potatoes, Pinapple-Lime Sorbet

Rheba, we usually make them with tuna, but I have some salmon I want to try. When I do tuna I use tuna (of course), egg, bread crumbs, salt, pepper, minced onion, minced garlic, old bay seasoning, and sometimes a little cayenne. Once I have them made into patties, I just cook them in the skillet. I know that some people bread the outsides, but I never have. The Old Bay really adds a nice flavor - you might give that a try - and I serve them with tartar sauce and sometimes a little lemon or lime. :)
Sandra, the pumpkin custard is great for breakfast. I like it with cinnamon toast, or just alone. Most years we raise a lot of pumpkins (we had a lot of hail damage this year, then the deer showed up), so pumpkin custard is a 'regular' on our menu, whether it's breakfast or dessert. :)
I didn't mean to mislead you - the produce will last us a couple weeks, but not everything will. We ate the bean sprouts right away - used them in lo mein. We eat the items with the shortest shelf life (bananas, green onions, peppers, bean sprouts, cucumbers) the first week. Citrus and apples keep a while, as does cabbage, so we will have them around for the second week. This week we'll finish up some romaine lettuce from a previous week, so if we have salad next week it will be cole slaw.
Hope that clears up my process a little. Sorry for any confusion.
