Menu Plan for Christmas Week!

Hi, Y'all! We're using a couple of things we never got to last week, as usual!

Breakfasts: Cranbberry Lemon Pecan Scones adapted from this recipe (from the freezer), Assorted Cereals with milk, Pancakes (from the freezer), fresh fruit or applesauce to go with.

Suppers: Leftovers from lunches.

Lunch tends to be our main meal, as Hubby works nights.

M: Chile Rellenos Casserole, Mexican Style Rice, Refried Beans, Orange Wedges

T: Roasted Chicken, Stuffing, Butternut-Pecan Casserole, Raw Vegetable Tray

W: Enchilada Soup (from freezer) with salsa, chips, sour cream, etc., Clementine Oranges

R: Christmas Brunch with Friends - We are taking homemade rolls.

F: Roast Turkey Breast, Mashed Potatoes w/Gravy, Green Bean Casserole, Glazed Carrots, Rolls, Pumpkin Pie

Saturday and Sunday: Leftover Dee-light!

In addition to all this, we have some homemade fudge, cinnamon spiced nuts, and we'll be making Christmas Cookies. Have a wonderful Christmas week!

I wonder if one could make the chile relleno casserole w/o the tomato sauce? I think we might have that tonight!

I think one could, Paula. This was my first time making it. I read some of the reviews and switched enchilada sauce for the tomato sauce. It still needed something - chipotle tabasco maybe? It was pretty good, but I think it needs a bit of tweaking for me. :)

I think I'm like you ~ I'd have to 'doctor' it up a little more to give it a little more fizazz.

You know I thought of you while I was making this, Farmer J. Some of the comments on the recipe said to make it in a smaller pan - I agree. It was less than an inch tall when it was done, and would have had nicer presentation in an 8x8 or 9x9 pan. It seems like it needed some salt (maybe the cheese I used wasn't as salty as some brands?), and some oomph. It was in the ballpark, but I think a tweak or two would make it a grand slam. (I hope those baseball references are accurate, hee hee.)
