Whew!
I have 7 more quarts of green beans in the canner, I dried about 8 zucchini today, and the garden is really getting busy! I'd post pictures, but I have to recharge the battery.
I also have to recharge myself. Sleepy time now!

We redid our cherries the way you said and they turned out wonderful. We also did up our first 7 jars of canned tomatoes and jalapenos, and they are gorgeous! I'm so excited! What would have cost me $10.50 at the store (for smaller cans) cost me about $1. All I had to buy were the jalapenos! Woot!
In the mean time, I'm expecting plums from a friend in about a week, I'll have more green beans, possibly potatoes to dig, onions to pull, and peaches from our trees before too long. Yum!

I don't really make tomato juice - I let my Kitchenaid do all the work. I quarter the tomatoes, peel and all, and heat them through, then run them through the food mill. Juice goes into one bowl, seeds and peels go into another bowl. I can the juice and feed the seeds and peels to the hens.
I'm lazy at heart!
As for details, I do whatever the Ball Blue Book tells me to do, adjusted for my altitude.
I've never made tomato sauce, though I'm sure it wouldn't be that hard. You could probably just put the juice in the crock pot overnight with the lid a little askew, so it would cook down and thicken.
That's how I do apple butter, concentrated chicken broth, all kinds of stuff.
