Whew!

I have 7 more quarts of green beans in the canner, I dried about 8 zucchini today, and the garden is really getting busy! I'd post pictures, but I have to recharge the battery.

I also have to recharge myself. Sleepy time now!

(Oh. Guess I'd better wait until those beans can come out of the canner.)

We redid our cherries the way you said and they turned out wonderful. We also did up our first 7 jars of canned tomatoes and jalapenos, and they are gorgeous! I'm so excited! What would have cost me $10.50 at the store (for smaller cans) cost me about $1. All I had to buy were the jalapenos! Woot!

Wow - that sounds so good! My plans for tomatoes this year include chili sauce and tomato juice, mostly. Right now all my tomatoes are green (and fairly small) so it will be a while.

In the mean time, I'm expecting plums from a friend in about a week, I'll have more green beans, possibly potatoes to dig, onions to pull, and peaches from our trees before too long. Yum!

Hey--what do you use the chili sauce for? And how do you make tomato juice?? Have you ever made homemade tomato sauce? Man--that stuff is up to .25/can over here and is nowhere near as affordable as it used to be.

Chili sauce is like salsa, but thicker, and sweeter...and not very spicy...so I guess it's not really like salsa - though it is red!

It's good in lots of stuff - even baked beans!

I don't really make tomato juice - I let my Kitchenaid do all the work. I quarter the tomatoes, peel and all, and heat them through, then run them through the food mill. Juice goes into one bowl, seeds and peels go into another bowl. I can the juice and feed the seeds and peels to the hens.

I'm lazy at heart!

As for details, I do whatever the Ball Blue Book tells me to do, adjusted for my altitude.

I've never made tomato sauce, though I'm sure it wouldn't be that hard. You could probably just put the juice in the crock pot overnight with the lid a little askew, so it would cook down and thicken.

That's how I do apple butter, concentrated chicken broth, all kinds of stuff.

See? Told you I was lazy!
